Banana Nut Muffins

That’s not what I wanted to call this post. I WANTED to call it, Is That A Banana In Your Muffin? But once I wrote it I realized my site would probably get flagged for pornographic content. What can I say, it’s Monday. banana Organic Gluten-Free Banana Nut Muffins These are perfect for Monday morning! Get rolling on a new week with easy, sweet, low-fat treats that are super simple to make! Pre-heat the oven to 350 and put on some tunes. This morning was foggy and cool, so I played some early Brandi Carlile. Seemed right.
  • 3 over-ripe bananas, mashed in a large bowl
  • 3 tbls. sunflower oil and 1 tbls. coconut oil
  • 1/4 cup light agave
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinammon
  • 2 cups Pamela’s baking mix
  • 1/2 cup chopped nuts (walnuts are traditional, but I used pecans)
Mix the bananas, oil, agave, egg and vanilla together until well combined. Add the cinammon, Pamela’s and nuts and mix well. Add a couple tbls. of the batter to each spot in a greased muffin tin. Bake for 18-20 minutes or until the tops are raised and lightly browned. Done!! Eat them by yourself, or in my case, bring them out to your long-suffering contractor who is mired in a garage re-model! xox sal

  1. That is a happy contractor! As someone that has been on that side of the transaction, albeit a long time ago, food was always appreciated!
